Naturally Sweet White Wine from Sundried Grapes - PROTECTED DESIGNATION OF ORIGIN SANTORINI
Vinsanto is the mythical nectar of Santorini produced from the three basic varietals Assyrtiko, Aidani and Athiri. The harvest begins in mid-August, when the grapes achieve the desired degree of maturation (14-15 Be). Then, they are sundried on terraces for approximately 10 days. The vinification is curried out using the traditional techniques at the Gavalas winery in Megalochori. The stomping of the grapes always takes place early in the afternoon, so that the clusters of the grapes are still warm and at their best for pressing. The small quantity of juice which is produced has a high content of sugars.
The fermentation occurs due to the wild yeasts and continues until almost Christmas into Russian oak barrels. Fruity, with an intense taste of raisins, dry figs, dry prunes, nuts and honey, full-body, velvety with balanced sweetness and refreshing acidity.
It accompanies pastries, desserts and strong flavor cheeses. Vinsanto fills the chalices of the Orthodox churches, used for the Holy Communion.
